Ingredients

- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 pound shrimp, peeled and deveined
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon Cajun seasoning
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Cook the rice according to package directions using chicken broth.
- While the rice cooks, heat olive oil in a skillet over medium-high heat.
- Add shrimp and Cajun seasoning, salt, and pepper. Cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet.
- Add onion to the skillet and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in cooked rice and parsley into the skillet with the onions and garlic.
- Serve the shrimp piled on top of the seasoned rice.
Notes
- Adjust Cajun seasoning to your spice preference.
- You can add diced bell peppers or celery with the onion for extra flavor and texture.
