  • 1/8 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the rice according to package directions using chicken broth.
  2. While the rice cooks, heat olive oil in a skillet over medium-high heat.
  3. Add shrimp and Cajun seasoning, salt, and pepper. Cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet.
  4. Add onion to the skillet and cook until softened, about 5 minutes.
  5. Add garlic and cook for 1 minute more until fragrant.
  6. Stir in cooked rice and parsley into the skillet with the onions and garlic.
  7. Serve the shrimp piled on top of the seasoned rice.
