Instructions
- Preheat oven to 325°F (165°C).
- Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into a 9-inch springform pan.
- Bake the crust for 10 minutes, then let it cool.
- Beat cream cheese and 3/4 cup sugar until smooth.
- Add eggs one at a time, mixing well after each.
- Stir in vanilla, sour cream, and lemon zest.
- Pour filling over the crust and bake for 50-55 minutes until set.
- Cool in the oven with the door slightly open, then refrigerate for 4 hours.
- Top with fresh strawberries before serving.
