Description

A comforting baked dish featuring spinach and potatoes in a creamy sauce.


Ingredients

Scale
  • 1 kg potatoes, peeled and sliced
  • 500 g fresh spinach, washed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 50g butter
  • 50g plain flour
  • 500 ml milk
  • 100g cheese, grated
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 200°C (180°C fan/gas mark 6).
  2. Parboil the potato slices for 5 minutes. Drain and set aside.
  3. In a large pan, melt the butter over medium heat. Add the chopped onion and cook until softened.
  4. Stir in the minced garlic and cook for 1 minute more.
  5. Add the flour and cook, stirring constantly, for 1-2 minutes.
  6. Gradually whisk in the milk until the sauce is smooth and thickened.
  7. Add the cheese and stir until melted. Season with salt and pepper.
  8. Stir the fresh spinach into the sauce and cook until wilted.
  9. Layer the parboiled potato slices and spinach sauce in an ovenproof dish.
  10. Bake for 25-30 minutes, or until golden brown and bubbly.

Notes

  • You can use frozen spinach, just make sure to thaw and drain it well.
  • Feel free to add other vegetables like mushrooms or bell peppers.
  • A sprinkle of breadcrumbs on top can add extra crunch.
