- 1 pre-made pie crust
- 1 tablespoon olive oil
- 1 cup sliced mushrooms
- 1 cup chopped fresh spinach
- 1/2 cup chopped onion
- 4 large eggs
- 1 1/2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded Swiss cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Press the pie crust into a 9-inch pie plate.
- Heat olive oil in a skillet over medium heat. Add mushrooms, spinach, and onion. Cook until softened, about 5-7 minutes. Drain any excess liquid.
- Spread the cooked vegetables evenly in the bottom of the pie crust.
- Sprinkle the Swiss cheese over the vegetables.
- In a separate bowl, whisk together eggs, milk, salt, and pepper.
- Pour the egg mixture over the cheese and vegetables.
- Bake for 40-50 minutes, or until the center is set and the top is golden brown.
- Let cool for 10 minutes before slicing and serving.
Notes
- You can add other vegetables like bell peppers or broccoli.
- For a richer flavor, use half-and-half instead of milk.
- Ensure vegetables are well-drained to prevent a watery quiche.
