Instructions

  1. Place the watermelon cubes, lime juice, mint leaves, simple syrup, and chili powder or jalapeño slices into a blender.
  2. Blend until completely smooth.
  3. Strain the mixture through a fine-mesh sieve into a bowl to remove pulp and mint pieces. Press down on the solids to extract all liquid.
  4. Fill glasses with ice cubes.
  5. Pour the strained watermelon mixture into the glasses, filling them about two-thirds full.
  6. Top each glass with sparkling water or club soda.
  7. Gently stir each mocktail.
  8. Garnish with a small watermelon wedge and a mint sprig before serving.
