Ingredients

- 4 cups cubed seedless watermelon
- 1/2 cup fresh lime juice
- 1/4 cup fresh mint leaves
- 1 tablespoon simple syrup (adjust to taste)
- 1/2 teaspoon chili powder or a few thin slices of jalapeño (optional)
- 1 cup sparkling water or club soda
- Ice cubes
Instructions
- Place the watermelon cubes, lime juice, mint leaves, simple syrup, and chili powder or jalapeño slices into a blender.
- Blend until completely smooth.
- Strain the mixture through a fine-mesh sieve into a bowl to remove pulp and mint pieces. Press down on the solids to extract all liquid.
- Fill glasses with ice cubes.
- Pour the strained watermelon mixture into the glasses, filling them about two-thirds full.
- Top each glass with sparkling water or club soda.
- Gently stir each mocktail.
- Garnish with a small watermelon wedge and a mint sprig before serving.
Notes
- For a stronger spice flavor, muddle the jalapeño slices directly in the glass before adding ice and liquid.
- Adjust simple syrup amount based on the sweetness of your watermelon.
- You can make the watermelon base ahead of time and store it in the refrigerator for up to 2 days.
