A quick and flavorful recipe for spicy Thai peanut noodles.

- 8 ounces dried noodles
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey or maple syrup
- 1–2 teaspoons sriracha or other hot sauce, to taste
- 1 clove garlic, minced
- 1/4 cup hot water, or more as needed
- 1/4 cup chopped roasted peanuts, for garnish
- 2 green onions, thinly sliced, for garnish
- Fresh cilantro, chopped, for garnish
Instructions
- Cook noodles according to package directions. Drain and rinse with cold water.
- In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, sriracha, and garlic until smooth.
- Gradually whisk in hot water until the sauce reaches your desired consistency. Add more water, one tablespoon at a time, if needed.
- Add the drained noodles to the bowl with the sauce. Toss to coat evenly.
- Divide noodles among serving bowls. Garnish with chopped peanuts, green onions, and cilantro.
Notes
- For a vegetarian option, use maple syrup instead of honey.
- Adjust the amount of sriracha to control the spice level.
- You can add cooked chicken, shrimp, or tofu for a complete meal.
