Ingredients

  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 12 teaspoons sriracha or other hot sauce, to taste
  • 1 clove garlic, minced
  • 1/4 cup hot water, or more as needed
  • 1/4 cup chopped roasted peanuts, for garnish
  • 2 green onions, thinly sliced, for garnish
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Cook noodles according to package directions. Drain and rinse with cold water.
  2. In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, sriracha, and garlic until smooth.
  3. Gradually whisk in hot water until the sauce reaches your desired consistency. Add more water, one tablespoon at a time, if needed.
  4. Add the drained noodles to the bowl with the sauce. Toss to coat evenly.
  5. Divide noodles among serving bowls. Garnish with chopped peanuts, green onions, and cilantro.

Notes

  • For a vegetarian option, use maple syrup instead of honey.
  • Adjust the amount of sriracha to control the spice level.
