Description

A quick recipe for linguine pasta tossed with crab meat in a spicy tomato sauce.


Ingredients

  • 1 pound linguine pasta
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup dry white wine
  • 8 ounces lump crab meat, picked over
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Cook linguine according to package directions. Reserve 1/2 cup of the pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add garlic and red pepper flakes. Cook for 1 minute until fragrant.
  4. Pour in diced tomatoes and white wine. Bring to a simmer and cook for 5 minutes, allowing the sauce to reduce slightly.
  5. Gently fold in the crab meat. Cook for 2 minutes until heated through. Do not overcook the crab.
  6. Add the drained linguine to the skillet with the sauce. Toss to coat.
  7. If the sauce seems too thick, add reserved pasta water, one tablespoon at a time, until desired consistency is reached.
  8. Season with salt and pepper. Stir in fresh parsley.
  9. Serve immediately.
