- 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 cup full-fat coconut milk
- 2 tbsp soy sauce
- 1 tbsp sriracha (or more, to taste)
- 1 tsp grated fresh ginger
- 2 cloves garlic, minced
- 1 tbsp lime juice
- 1 tsp brown sugar
- 1/2 tsp turmeric powder
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, whisk together coconut milk, soy sauce, sriracha, ginger, garlic, lime juice, brown sugar, and turmeric.
- Season the chicken pieces with salt and pepper.
- Add the chicken to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
- Preheat your grill or oven to medium-high heat (400°F or 200°C).
- Thread the marinated chicken onto the soaked wooden skewers.
- Grill the skewers for 8-10 minutes, turning occasionally, until cooked through and lightly charred.
- Alternatively, bake the skewers in the preheated oven for 15-20 minutes, turning halfway through, until cooked through.
- Serve hot.
