Spicy Buffalo Chickpea Wrap

Description

A quick and easy vegetarian wrap featuring spicy buffalo-flavored chickpeas.


Ingredients

  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1/4 cup buffalo wing sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 4 large whole wheat tortillas
  • 1/2 cup shredded lettuce
  • 1/4 cup chopped celery
  • 2 tablespoons blue cheese dressing or ranch dressing (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add rinsed chickpeas to the skillet. Cook for 3-4 minutes, stirring occasionally, until slightly softened.
  3. Stir in buffalo sauce and garlic powder. Cook for another 2 minutes until the sauce thickens slightly and coats the chickpeas. Remove from heat and stir in salt.
  4. Warm the tortillas according to package directions.
  5. Place a portion of the chickpea mixture down the center of each tortilla.
  6. Top with shredded lettuce, chopped celery, and dressing, if using.
  7. Fold in the sides of the tortilla, then roll tightly from the bottom to create a wrap.
  8. Serve immediately.

Notes

  • For extra heat, add a dash of cayenne pepper with the garlic powder.
  • You can substitute blue cheese or ranch dressing with plain Greek yogurt for a lighter option.
  • If you do not have celery, use chopped carrots instead.
