  • 2 large eggs

  • 2 cups grated zucchini, excess moisture squeezed out

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, cloves, and cardamom.
  3. In a large bowl, whisk together the sugar, oil, eggs, and vanilla extract until well combined.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
  5. Fold in the grated zucchini.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
