Description
A quick and easy one-pan meal featuring ground turkey, rice, black beans, corn, and Southwest spices.

- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup frozen corn
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese (optional topping)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add chopped onion and cook until softened, about 5 minutes.
- Stir in minced garlic, chili powder, cumin, and oregano. Cook for 1 minute until fragrant.
- Add diced tomatoes and green chilies, black beans, corn, uncooked rice, and chicken broth to the skillet. Stir well to combine.
- Bring the mixture to a boil. Once boiling, reduce heat to low, cover the skillet, and simmer for 18 to 20 minutes, or until the rice is tender and the liquid is absorbed. Do not lift the lid during simmering.
- Remove the skillet from the heat. Let it stand, covered, for 5 minutes.
- Fluff the rice with a fork. Season with salt and pepper to taste.
- If using, sprinkle shredded cheese over the top and cover briefly until the cheese melts.
- Serve hot.
Notes
- For extra flavor, substitute water with salsa for part of the chicken broth.
- You can use pre-cooked rice if you reduce the simmering time significantly.
