- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup frozen corn, thawed
- 1 red bell pepper, chopped
- 1/2 red onion, finely chopped
- 1/2 cup chopped cilantro
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Combine the rinsed black beans, thawed corn, chopped red bell pepper, chopped red onion, and cilantro in a large bowl.
- In a small bowl, whisk together the olive oil, lime juice, ground cumin, salt, and pepper to make the dressing.
- Pour the dressing over the bean and vegetable mixture.
- Toss gently until all ingredients are evenly coated.
- Chill the salad for at least 30 minutes before serving to allow flavors to blend.
Notes
- You can substitute canned corn for frozen corn if you drain it well.
- Adjust the amount of lime juice to your taste preference.
