Ingredients

- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup boiling water
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
- In a separate bowl, whisk together buttermilk, oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Carefully stir in the boiling water. The batter will be thin.
- Pour the batter into a greased 9×13 inch baking dish.
- Sprinkle chocolate chips over the top, if using.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool slightly before serving.
Notes
- Serve warm with vanilla ice cream or whipped cream.
- For a richer flavor, use dark cocoa powder.
