Slow Cooker Shrimp Delight is a flavorful and easy seafood recipe made with juicy shrimp, tomatoes, herbs, and spices—all slow-cooked to perfection.

- 1 lb large shrimp, peeled and deveined
- 1 can (14.5 oz) diced tomatoes, with juices
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced (red or yellow)
- 1 tsp smoked paprika
- ½ tsp dried thyme
- ½ tsp crushed red pepper flakes (optional)
- Salt and black pepper, to taste
- 2 tbsp olive oil
- ½ cup seafood or chicken broth
- Juice of ½ lemon
- 2 tbsp fresh parsley, chopped (for garnish)
- Cooked rice, pasta, or crusty bread for serving
Instructions
- In a skillet, heat olive oil over medium heat. Sauté onion and bell pepper until softened, about 5 minutes. Add garlic, paprika, thyme, and red pepper flakes, and cook for 1 more minute.
- Transfer sautéed mixture to the slow cooker. Add diced tomatoes with juice, broth, salt, pepper, and lemon juice. Stir well to combine.
- Cover and cook on LOW for 3–4 hours or HIGH for 1½–2 hours.
- 30 minutes before serving, add the shrimp. Stir, cover, and cook until shrimp are pink and opaque, about 20–30 minutes on LOW.
- Serve hot, garnished with fresh parsley, over rice, pasta, or with crusty bread.
Notes
- Add shrimp at the end to avoid overcooking.
- Use frozen shrimp if needed, but thaw them completely before adding.
- For a deeper flavor, don’t skip sautéing the aromatics.
- Great served over rice, pasta, or with warm crusty bread.
- Can be made spicier with extra red pepper flakes.
