A flavorful and easy slow cooker jambalaya packed with protein and vegetables.
Ingredients

- 1 lb chicken breast, diced
- 1 lb smoked sausage, sliced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 can diced tomatoes (14.5 oz)
- 2 cups chicken broth
- 1 cup long-grain white rice
- 1 tbsp Cajun seasoning
- 1 tsp dried thyme
- 1 tsp paprika
- 1/2 tsp cayenne pepper (optional)
- Salt and black pepper to taste
Instructions
- Place chicken, sausage, onion, bell pepper, celery, and garlic in the slow cooker.
- Add diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, paprika, and cayenne pepper. Stir well.
- Cover and cook on low for 6 hours or high for 3 hours.
- Check rice for doneness. If needed, cook an additional 30 minutes.
- Season with salt and black pepper before serving.
Notes
- For extra heat, add more cayenne pepper.
- Shrimp can be added in the last 30 minutes of cooking.
- Stir occasionally if possible for even cooking.
