Ingredients

  • 1 lb chicken breast, diced
  • 1 lb smoked sausage, sliced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • 1 cup long-grain white rice
  • 1 tbsp Cajun seasoning
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Place chicken, sausage, onion, bell pepper, celery, and garlic in the slow cooker.
  2. Add diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, paprika, and cayenne pepper. Stir well.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. Check rice for doneness. If needed, cook an additional 30 minutes.
  5. Season with salt and black pepper before serving.

Notes

  • For extra heat, add more cayenne pepper.
  • Shrimp can be added in the last 30 minutes of cooking.
  • Stir occasionally if possible for even cooking.
