Description

Simple recipe for tender chicken cooked in a sweet and savory honey garlic sauce using a slow cooker.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup water
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon cornstarch
  • 2 tablespoons cold water (for slurry)

Instructions

  1. Place chicken in the slow cooker.
  2. In a separate bowl, whisk together soy sauce, honey, 1/4 cup water, minced garlic, and ginger.
  3. Pour the sauce mixture over the chicken.
  4. Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours, until the chicken is cooked through.
  5. Remove chicken from the slow cooker and shred or slice it. Set aside.
  6. In a small bowl, whisk together cornstarch and 2 tablespoons of cold water to make a slurry.
  7. Pour the slurry into the slow cooker liquid remaining in the pot. Stir well.
  8. Cook on high for 10 to 15 minutes, stirring occasionally, until the sauce thickens.
  9. Return the chicken to the slow cooker and toss to coat with the thickened sauce.
  10. Serve hot.

Notes

  • Serve this chicken over rice or with steamed vegetables.
  • For extra flavor, add a pinch of red pepper flakes to the sauce mixture.
