Description

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1.5 lbs small red potatoes, halved or quartered
  • 1 cup beef broth
  • 1/2 cup butter, melted
  • 6 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Instructions

  1. Place the beef cubes and potatoes in the slow cooker.
  2. In a separate bowl, whisk together the beef broth, melted butter, minced garlic, Worcestershire sauce, Italian seasoning, salt, and pepper.
  3. Pour the liquid mixture over the beef and potatoes in the slow cooker.
  4. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the beef is tender.
  5. In a small bowl, mix the cornstarch and cold water to create a slurry.
  6. Stir the slurry into the slow cooker during the last 30 minutes of cooking.
  7. Stir gently until the sauce thickens slightly.
  8. Serve hot.

Notes

  • For extra flavor, add 1/2 cup chopped onion with the beef.
  • Garnish with fresh chopped parsley before serving.
