Tender beef pieces and potatoes cooked slowly in a rich garlic butter sauce.

- 2 lbs beef chuck, cut into 1-inch cubes
- 1.5 lbs small red potatoes, halved or quartered
- 1 cup beef broth
- 1/2 cup butter, melted
- 6 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons cornstarch
- 2 tablespoons cold water
Instructions
- Place the beef cubes and potatoes in the slow cooker.
- In a separate bowl, whisk together the beef broth, melted butter, minced garlic, Worcestershire sauce, Italian seasoning, salt, and pepper.
- Pour the liquid mixture over the beef and potatoes in the slow cooker.
- Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the beef is tender.
- In a small bowl, mix the cornstarch and cold water to create a slurry.
- Stir the slurry into the slow cooker during the last 30 minutes of cooking.
- Stir gently until the sauce thickens slightly.
- Serve hot.
Notes
- For extra flavor, add 1/2 cup chopped onion with the beef.
- Garnish with fresh chopped parsley before serving.
