 - 1 cup red wine (optional)
 - 1 can (14.5 oz) diced tomatoes

 - 1 tsp dried thyme
 - 1 tsp dried rosemary
 - 1 bay leaf
 - Salt & black pepper, to taste
 - 2 tbsp cornstarch (optional, for thickening)
 - ¼ cup water (for cornstarch slurry)
 
Instructions
- Heat olive oil in a large pot over medium-high heat.
 - Season beef chunks with salt and pepper, then sear until browned on all sides.
 - Transfer the beef to a slow cooker or Dutch oven.
 - In the same pot, sauté onions until softened, then add garlic and cook for 30 seconds.
 - Pour in red wine, scraping up browned bits from the bottom of the pot.
 - Stir in tomato paste, Worcestershire sauce, paprika, thyme, and rosemary.
 - Add carrots, potatoes, diced tomatoes, and bay leaf to the slow cooker.
 - Pour in beef broth, ensuring everything is submerged.
 - Cover and cook on LOW for 6-8 hours (or HIGH for 4-5 hours) until the beef is fork-tender.
 - Mix cornstarch and water in a small bowl, then stir into the stew in the last 30 minutes if a thicker consistency is desired.
 - Remove bay leaf, adjust seasoning, and serve hot.
