  • 1 bay leaf
  • Salt & black pepper, to taste
  • 2 tbsp cornstarch (optional, for thickening)
  • ¼ cup water (for cornstarch slurry)

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season beef chunks with salt and pepper, then sear until browned on all sides.
  3. Transfer the beef to a slow cooker or Dutch oven.
  4. In the same pot, sauté onions until softened, then add garlic and cook for 30 seconds.
  5. Pour in red wine, scraping up browned bits from the bottom of the pot.
  6. Stir in tomato paste, Worcestershire sauce, paprika, thyme, and rosemary.
  7. Add carrots, potatoes, diced tomatoes, and bay leaf to the slow cooker.
  8. Pour in beef broth, ensuring everything is submerged.
  9. Cover and cook on LOW for 6-8 hours (or HIGH for 4-5 hours) until the beef is fork-tender.
  10. Mix cornstarch and water in a small bowl, then stir into the stew in the last 30 minutes if a thicker consistency is desired.
  11. Remove bay leaf, adjust seasoning, and serve hot.
