Description
Shrimp Taco Recipe made with grilled shrimp, crunchy slaw, creamy chipotle sauce, and avocado for the ultimate taco night.

			- 1 to 1.5 lbs large shrimp, peeled and deveined
 - 1 tbsp olive oil
 - 1 tsp chili powder
 - 1/2 tsp paprika or smoked paprika
 - 1/2 tsp garlic powder
 - 1/4 tsp salt
 - 1/4 tsp black pepper
 - Juice of 1 lime
 - 8 small corn or flour tortillas
 - 1 cup shredded red cabbage
 - 1 tbsp chopped cilantro (optional)
 - 1 ripe avocado, diced or smashed
 - Lime wedges for serving
 - 1/2 cup mayonnaise or Greek yogurt (for sauce)
 - 1 chipotle pepper in adobo or 2 tsp adobo sauce
 - Juice of 1/2 lime (for sauce)
 - Pinch of garlic powder (for sauce)
 - Water to thin sauce if needed
 
Instructions
- In a bowl, toss shrimp with olive oil, chili powder, paprika, garlic powder, salt, pepper, and lime juice. Marinate for 10–15 minutes.
 - While the shrimp marinates, prepare the slaw by combining shredded red cabbage, a squeeze of lime, and a pinch of salt. Set aside.
 - Make the chipotle-lime sauce by blending mayonnaise (or yogurt), chipotle pepper, lime juice, and garlic powder. Add water to thin if needed.
 - Heat a skillet or grill pan over medium-high heat. Cook the shrimp 2–3 minutes per side until pink and slightly charred. Do not overcook.
 - Warm tortillas in a dry skillet or over a gas flame until lightly toasted and pliable.
 - To assemble, spread avocado on each tortilla, add slaw, top with shrimp, drizzle with chipotle sauce, and garnish with cilantro and lime.
 - Serve immediately with your favorite sides and extra lime wedges.

 - You can substitute chipotle sauce with jalapeño ranch or cilantro-lime crema.
 - Slaw can be prepped a day ahead for quicker assembly.
