Description

  • 1 to 1.5 lbs large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp paprika or smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1 lime
  • 8 small corn or flour tortillas
  • 1 cup shredded red cabbage
  • 1 tbsp chopped cilantro (optional)
  • 1 ripe avocado, diced or smashed
  • Lime wedges for serving
  • 1/2 cup mayonnaise or Greek yogurt (for sauce)
  • 1 chipotle pepper in adobo or 2 tsp adobo sauce
  • Juice of 1/2 lime (for sauce)
  • Pinch of garlic powder (for sauce)
  • Water to thin sauce if needed

Instructions

  1. In a bowl, toss shrimp with olive oil, chili powder, paprika, garlic powder, salt, pepper, and lime juice. Marinate for 10–15 minutes.
  2. While the shrimp marinates, prepare the slaw by combining shredded red cabbage, a squeeze of lime, and a pinch of salt. Set aside.
  3. Make the chipotle-lime sauce by blending mayonnaise (or yogurt), chipotle pepper, lime juice, and garlic powder. Add water to thin if needed.
  4. Heat a skillet or grill pan over medium-high heat. Cook the shrimp 2–3 minutes per side until pink and slightly charred. Do not overcook.
  5. Warm tortillas in a dry skillet or over a gas flame until lightly toasted and pliable.
  6. To assemble, spread avocado on each tortilla, add slaw, top with shrimp, drizzle with chipotle sauce, and garnish with cilantro and lime.
  7. Serve immediately with your favorite sides and extra lime wedges.
