A light and refreshing pasta salad featuring shrimp, avocado, and a zesty dressing.
Ingredients

- 8 ounces pasta (such as rotini or penne)
- 1 pound cooked shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine cooked pasta, shrimp, avocado, cherry tomatoes, red onion, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
- Pour dressing over pasta mixture and toss gently to coat.
- Serve immediately or chill in the refrigerator for at least 30 minutes before serving.
Notes
- You can substitute other vegetables like bell peppers or cucumbers.
- Add a pinch of red pepper flakes for a little heat.
- This salad is best served the same day it’s made.
