Description

A simple recipe for classic shepherd’s pie made with ground beef and topped with mashed potatoes.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1.5 pounds ground beef
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 cup frozen peas
  • 4 large potatoes, peeled and quartered
  • 1/4 cup milk
  • 4 tablespoons butter
  • Salt and black pepper to taste

Instructions

  1. Boil potatoes in salted water until tender. Drain, then mash with milk and butter. Season with salt and pepper. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Add ground beef to the skillet. Cook, breaking it up with a spoon, until browned. Drain excess fat.
  4. Stir in flour, then add beef broth, Worcestershire sauce, and thyme. Bring to a simmer and cook until the sauce thickens slightly, about 5 minutes.
  5. Stir in frozen peas. Season the meat mixture with salt and pepper. Pour the mixture into a 9-inch baking dish.
  6. Spoon the mashed potatoes evenly over the meat mixture. Use a fork to create texture on top.
  7. Bake at 400 degrees Fahrenheit for 20 minutes, or until the topping is lightly browned and the filling is bubbling.

Notes

  • You can substitute sweet potatoes for regular potatoes for a different flavor.
  • For a richer flavor, add 1/2 cup of red wine with the beef broth.
