A hearty and comforting soup that captures the flavors of classic Shepherd’s Pie.

- 1 tablespoon olive oil
- 1 pound ground beef
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 6 cups beef broth
- 1 cup frozen peas
- 1/2 cup red wine (optional)
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 1/2 cup milk
- 2 tablespoons all-purpose flour
- 2 cups mashed potatoes
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat.
- Add chopped onion, carrots, and celery to the pot. Cook until vegetables are softened, about 5-7 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- If using, add red wine and scrape the bottom of the pot to loosen any browned bits. Cook for 2-3 minutes until slightly reduced.
- Pour in beef broth, add frozen peas and dried thyme. Bring to a simmer, then reduce heat and let it gently simmer for 15-20 minutes to allow flavors to meld.
- In a small bowl, whisk together milk and flour until smooth. Gradually whisk this mixture into the simmering soup. Cook, stirring constantly, until the soup thickens slightly, about 5 minutes.
- Season with salt and black pepper to taste.
- To serve, ladle soup into bowls. Top each serving with a dollop of mashed potatoes and sprinkle with shredded cheddar cheese, if desired.
Notes
- You can substitute ground lamb for ground beef for a more traditional Shepherd’s Pie flavor.
- Adjust the thickness of the soup by adding more broth or simmering longer.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
