- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground mustard
- 1/8 teaspoon cayenne pepper
- 1 cup shredded cheddar cheese
- 1/2 cup grated zucchini
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
Instructions
- Preheat oven to 375°F (190°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, pepper, ground mustard, and cayenne pepper.
- Stir in shredded cheddar cheese and grated zucchini.
- In a separate bowl, whisk together milk, vegetable oil, and egg.
- Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
- Pour batter into prepared loaf pan.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- You can add other savory ingredients like chopped chives or dill.
- This bread is delicious served warm with butter.
