Instructions

  1. Preheat oven to 375°F (190°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, pepper, ground mustard, and cayenne pepper.
  3. Stir in shredded cheddar cheese and grated zucchini.
  4. In a separate bowl, whisk together milk, vegetable oil, and egg.
  5. Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
  6. Pour batter into prepared loaf pan.
