Ingredients

  • 2 medium zucchini
  • 8 ounces mushrooms
  • 1 medium onion
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and trim the ends of the zucchini. Cut the zucchini into half-moon slices.
  2. Wipe the mushrooms clean and slice them.
  3. Peel and thinly slice the onion.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Add the onion to the skillet and cook until softened, about 3 minutes.
  6. Add the mushrooms to the skillet and cook until they release their moisture and start to brown, about 5 to 7 minutes.
  7. Add the zucchini slices to the skillet.
  8. Season with salt and pepper.
  9. Cook, stirring occasionally, until the zucchini is tender-crisp, about 5 minutes.
  10. Remove from heat and serve immediately.

Notes

  • You can add a pinch of dried thyme for extra flavor.
  • For a richer taste, use butter instead of half the olive oil.
