Description
A quick and simple bowl featuring sauteed sausage and mixed vegetables served over rice.
Ingredients

- 1 tbsp olive oil
- 1 lb Italian sausage, casings removed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 cup broccoli florets
- 1 cup sliced mushrooms
- 1/2 tsp dried oregano
- 1/4 tsp black pepper
- 1/4 tsp salt
- 4 cups cooked white rice
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add sausage to the skillet and cook, breaking it up with a spoon, until browned. Drain excess fat.
- Add onion and garlic to the skillet. Cook for 3 minutes until the onion softens.
- Add bell pepper, broccoli, and mushrooms to the skillet. Cook for 5-7 minutes until vegetables are tender-crisp.
- Stir in oregano, salt, and pepper. Cook for 1 minute more.
- Divide cooked rice among four bowls. Top each serving with the sausage and vegetable mixture.
Notes
- You can substitute Italian sausage with chicken or turkey sausage for a different flavor profile.
- Use brown rice instead of white rice for added fiber.
