Ingredients

- 2 pounds Yukon Gold potatoes, peeled and quartered
- 1 head garlic
- 1/2 cup heavy cream
- 1/4 cup unsalted butter
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon salt, or to taste
- 1/8 teaspoon black pepper, or to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Cut off the top 1/4 inch of the garlic head. Drizzle with olive oil, wrap in foil, and roast for 40-50 minutes, until soft and fragrant.
- While the garlic roasts, place the potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil and cook for 15-20 minutes, or until fork-tender.
- Drain the potatoes well and return them to the pot.
- Squeeze the roasted garlic cloves out of their skins into the pot with the potatoes.
- Add the heavy cream and butter to the pot. Mash the potatoes with a potato masher or ricer until smooth and creamy.
- Stir in the grated Parmesan cheese, salt, and pepper. Mix until well combined.
- Taste and adjust seasoning if needed. Serve hot.
Notes
- For extra flavor, you can add a tablespoon of chopped fresh chives or parsley before serving.
- If you prefer a smoother texture, use a potato ricer.
