Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • 1 head garlic
  • 1/4 cup olive oil
  • 1/2 cup milk, warmed
  • 1/4 cup unsalted butter, softened
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut off the top 1/4 inch of the garlic head. Place on a piece of foil, drizzle with 1 tablespoon of olive oil. Wrap foil around garlic.
  3. Roast garlic for 40-50 minutes, until soft and fragrant.
  4. While garlic roasts, boil potatoes in salted water until tender, about 15-20 minutes.
  5. Drain potatoes well.
  6. Squeeze roasted garlic cloves from their skins into a large bowl.
  7. Add drained potatoes to the bowl with the garlic.
  8. Mash potatoes and garlic together.
  9. Gradually add warmed milk and softened butter, mixing until creamy.
  10. Season with salt and pepper to your preference.
