Ingredients

  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup powdered sugar
  • 1 large egg yolk
  • 1 cup almond flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh raspberries

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flour, cold butter, and powdered sugar until crumbly. Add egg yolk and mix until dough forms.
  3. Press dough into a tart pan and bake for 15 minutes.
  4. Beat almond flour, granulated sugar, softened butter, egg, and vanilla until smooth.
  5. Spread filling over the baked crust and top with raspberries.
  6. Bake for 25 minutes or until golden. Let cool before serving.

Notes

  • Use cold butter for the crust for best texture.
  • Fresh raspberries work best, but frozen can be used if thawed and drained.
  • Cool completely before slicing for clean edges.
