Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup fresh or frozen raspberries
  • 1/2 cup sliced almonds
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  6. In a small bowl, combine the sliced almonds, brown sugar, and cinnamon for the streusel topping.
  7. Spread half of the batter into the prepared baking pan.
  8. Scatter the raspberries evenly over the batter.
  9. Dollop the remaining batter over the raspberries. Swirl gently with a knife.
  10. Sprinkle the almond streusel topping evenly over the cake.
  11. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
  12. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

  • For a brighter raspberry flavor, you can toss the raspberries with 1 tablespoon of flour before adding them to the batter.
  • If using frozen raspberries, do not thaw them before adding to the batter.
  • Ensure your buttermilk is at room temperature for best results.
