Description

A simple, colorful, and crunchy coleslaw recipe.


Ingredients

  • 2 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 cup shredded purple cabbage
  • 1/2 cup thinly sliced red onion
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place all shredded vegetables and red onion in a large bowl.
  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, salt, and pepper until smooth. This is your dressing.
  3. Pour the dressing over the vegetables.
  4. Toss everything together until the vegetables are evenly coated.
  5. Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • For extra crunch, add 1/4 cup of sunflower seeds just before serving.
  • You can substitute lime juice for apple cider vinegar for a slightly different tang.
