- 1 teaspoon baking soda
- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar, plus more for rolling
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup pumpkin puree (not pie filling)
- 1/4 cup powdered sugar
- 4 ounces cream cheese, softened
- 1/4 cup (1/2 stick) unsalted butter, softened
- 1 teaspoon vanilla extract
Instructions
- In a medium bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract and pumpkin puree.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Chill the dough for at least 30 minutes.
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- Roll dough into 1-inch balls. Roll balls in granulated sugar.
- Place balls 2 inches apart on prepared baking sheets.
- Bake for 9-11 minutes, or until edges are lightly golden. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
- For the frosting, beat together softened cream cheese and butter until smooth.
- Beat in powdered sugar and vanilla extract until combined and fluffy.
- Spread or pipe frosting onto cooled cookies.
Notes
- For a stronger pumpkin flavor, increase pumpkin pie spice to 2 1/2 teaspoons.
- You can add orange food coloring to the frosting for a festive look.
- Store cookies in an airtight container at room temperature for up to 3 days.
