  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup pumpkin puree (not pie filling)
  • 1/4 cup powdered sugar
  • 4 ounces cream cheese, softened
  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract and pumpkin puree.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Chill the dough for at least 30 minutes.
  6. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  7. Roll dough into 1-inch balls. Roll balls in granulated sugar.
  8. Place balls 2 inches apart on prepared baking sheets.
  9. Bake for 9-11 minutes, or until edges are lightly golden. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  10. For the frosting, beat together softened cream cheese and butter until smooth.
  11. Beat in powdered sugar and vanilla extract until combined and fluffy.
  12. Spread or pipe frosting onto cooled cookies.
