Ingredients
Scale
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 2 large eggs
- 1 3/4 cups milk
- 1/2 cup pumpkin puree
- 1/4 cup melted unsalted butter
- 1 teaspoon vanilla extract
- Maple syrup, for serving
Instructions
- Preheat your waffle iron according to manufacturer instructions.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, cloves, and salt.
- In a separate medium bowl, whisk together the eggs, milk, pumpkin puree, melted butter, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Lightly grease your waffle iron if needed.
- Pour about 1/2 cup of batter onto the preheated waffle iron for each waffle.
- Cook until golden brown and crisp, about 3-5 minutes, depending on your waffle iron.
- Repeat with the remaining batter.
- Serve immediately with maple syrup.
Notes
- For crispier waffles, you can add an extra tablespoon of melted butter to the batter.
- Ensure your pumpkin puree is not pumpkin pie filling.
- Leftover waffles can be stored in an airtight container in the refrigerator and reheated in a toaster or oven.
