Easy to make pumpkin spice cheesecake bars with a graham cracker crust.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 2 (8 ounce) packages cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/2 cup pumpkin puree
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, combine graham cracker crumbs and 1/4 cup sugar. Stir in melted butter until combined. Press mixture evenly into the bottom of the prepared pan.
- Bake crust for 10 minutes. Remove from oven and let cool slightly.
- In a large bowl, beat cream cheese and 3/4 cup sugar until smooth.
- Beat in eggs one at a time, then stir in vanilla extract and pumpkin pie spice.
- Stir in pumpkin puree until just combined.
- Pour pumpkin mixture over the prepared crust.
- Bake for 30-35 minutes, or until the edges are set and the center is almost set.
- Let cool completely in the pan on a wire rack.
- Chill for at least 2 hours before cutting into bars.
Notes
- For a richer flavor, you can add a pinch of cinnamon and nutmeg to the crust mixture.
- Ensure cream cheese is at room temperature for a smoother filling.
- Do not overmix the filling after adding the eggs.
