- 4 large apples (like Honeycrisp or Fuji)
- 1 cup pumpkin puree
- 1/4 cup brown sugar
- 1/4 cup heavy cream
- 1 large egg
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 tablespoons melted butter
- 2 tablespoons chopped pecans (optional)
- Whipped cream for topping (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Wash the apples and cut off the tops.
- Use a spoon or melon baller to scoop out the core and seeds, creating a cavity in each apple. Be careful not to go through the bottom.
- In a medium bowl, whisk together the pumpkin puree, brown sugar, heavy cream, egg, pumpkin pie spice, cinnamon, and nutmeg until well combined.
- Spoon the pumpkin mixture evenly into the cavities of the prepared apples.
- Place the stuffed apples in a baking dish.
- Pour about 1/4 inch of water into the bottom of the baking dish. This helps the apples steam and cook evenly.
- Bake for 30-45 minutes, or until the apples are tender when pierced with a fork. The baking time will vary depending on the size and type of apple.
- If using, sprinkle chopped pecans over the top of the pumpkin filling during the last 10 minutes of baking.
- Remove from the oven and let cool slightly before serving.
- Serve warm, topped with whipped cream if desired.
Notes
- For a richer flavor, you can add a tablespoon of molasses to the pumpkin filling.
- If you don’t have pumpkin pie spice, you can make your own by combining 3 tablespoons cinnamon, 2 teaspoons ginger, 2 teaspoons nutmeg, 1 teaspoon allspice, and 1 teaspoon cloves.
