Ingredients

  • 1.5 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1 cup pumpkin puree
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • For the Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/3 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cut into pieces

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, granulated sugar, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  3. In a separate bowl, beat together the pumpkin puree, softened butter, eggs, milk, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Prepare the streusel topping by combining the flour, brown sugar, granulated sugar, and cinnamon in a medium bowl. Cut in the cold butter with a pastry blender or your fingers until the mixture resembles coarse crumbs.
  6. Spread half of the coffee cake batter into the prepared baking pan. Sprinkle half of the streusel topping over the batter.
  7. Spread the remaining coffee cake batter over the streusel. Sprinkle the remaining streusel topping evenly over the top.
  8. Bake for 35-45 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Ensure your pumpkin puree is not pumpkin pie filling.
  • For a richer flavor, use real maple syrup in place of some of the sugar.
