Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 cup pumpkin puree

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, combine graham cracker crumbs and 1/4 cup sugar. Stir in melted butter until crumbs are moistened. Press mixture evenly into the bottom of the prepared pan.
  3. In a large bowl, beat cream cheese and 3/4 cup sugar until smooth. Beat in eggs one at a time, then stir in vanilla extract, pumpkin pie spice, and pumpkin puree until just combined.
  4. Pour cream cheese mixture over the graham cracker crust.
  5. Bake for 30-35 minutes, or until the edges are set and the center is almost set.
  6. Let cool completely in the pan on a wire rack.
  7. Chill for at least 2 hours before cutting into bars.

Notes

  • For best results, use room temperature cream cheese and eggs.
  • You can substitute gingersnap cookies for graham crackers for a different flavor.
  • Decorate with whipped cream and a sprinkle of cinnamon before serving.
