Delicious pumpkin cheesecake bars perfect for Halloween and Thanksgiving gatherings.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 2 (8 ounce) packages cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice
- 1/4 cup pumpkin puree
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, combine graham cracker crumbs and 1/4 cup sugar. Stir in melted butter until crumbs are moistened. Press mixture evenly into the bottom of the prepared pan.
- In a large bowl, beat cream cheese and 3/4 cup sugar until smooth. Beat in eggs one at a time, then stir in vanilla extract, pumpkin pie spice, and pumpkin puree until just combined.
- Pour cream cheese mixture over the graham cracker crust.
- Bake for 30-35 minutes, or until the edges are set and the center is almost set.
- Let cool completely in the pan on a wire rack.
- Chill for at least 2 hours before cutting into bars.
Notes
- For best results, use room temperature cream cheese and eggs.
- You can substitute gingersnap cookies for graham crackers for a different flavor.
- Decorate with whipped cream and a sprinkle of cinnamon before serving.
