A simple and elegant Christmas treat made with puff pastry and sugar.
Ingredients

- 2 sheets puff pastry, thawed
- 3/4 cup granulated sugar
- 1 teaspoon ground cinnamon (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line baking sheets with parchment paper.
- On a clean surface, sprinkle about half of the sugar (and cinnamon, if using) in an even layer.
- Unfold one sheet of puff pastry onto the sugared surface. Sprinkle the top of the pastry with more sugar.
- Using a rolling pin, gently roll the pastry into a rectangle about 10×12 inches, pressing the sugar into the dough.
- Fold the pastry in half lengthwise. Then fold each long edge towards the center crease, creating four layers.
- Cut the folded pastry into 1/2-inch thick slices.
- Place the slices cut-side up on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until golden brown and caramelized.
- Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
- Repeat with the second sheet of puff pastry.
Notes
- For extra flavor, you can add a pinch of nutmeg or cardamom to the sugar mixture.
- Ensure the puff pastry is fully thawed but still cold for best results.
- Watch the palmiers closely during baking as they can burn quickly due to the sugar.
