Description

Pork Chop Supreme Recipe – a juicy, flavorful dish with a perfect sear. This step-by-step recipe ensures tender, well-seasoned pork chops every time.

Ingredients

Scale
  • 4 bone-in pork chops (11.5 inches thick)
  • 1/4 cup olive oil
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp fresh rosemary, chopped
  • 1/2 tsp black pepper
  • Juice of 1/2 lemon
  • 1 tbsp butter
  • Salt and pepper to taste
  • 2 crushed garlic cloves (for basting)
  • Fresh rosemary sprigs (for garnish)

Instructions

  1. In a bowl, whisk together olive oil, soy sauce, Dijon mustard, honey, minced garlic, smoked paprika, rosemary, black pepper, and lemon juice to create the marinade.
  2. Place the pork chops in a ziplock bag or shallow dish and pour the marinade over them. Marinate for at least 30 minutes or overnight for best results.
  3. Remove the pork chops from the fridge 20-30 minutes before cooking to bring them to room temperature.
  4. Pat the pork chops dry with a paper towel to remove excess moisture.
  5. Heat 1 tbsp olive oil and 1 tbsp butter in a heavy skillet over medium-high heat.
  6. Once the pan is hot, place the pork chops in without overcrowding.
  7. Sear for 3-5 minutes on the first side without moving them.
  8. Flip and sear for another 3-4 minutes.
  9. Add 2 crushed garlic cloves and fresh rosemary sprigs to the pan and baste the pork chops with the melted butter.
  10. Use a meat thermometer to check the internal temperature. Once it reaches 140°F, remove the pork chops from heat.
  11. Let the pork chops rest for 5-10 minutes, loosely covered with foil, before serving.
  12. Garnish with fresh rosemary and a squeeze of lemon juice before serving.

Notes

  • For extra thick pork chops (1.5 inches or more), finish them in a preheated 375°F oven for 5-10 minutes after searing.
  • Use a meat thermometer to ensure they reach the ideal internal temperature of 145°F.
  • Resting the pork chops after cooking keeps them juicy and prevents juices from running out when cut.
  • Serve with mashed potatoes, roasted vegetables, or a fresh salad for a complete meal.
  • For a smoky touch, add a pinch of cayenne or extra smoked paprika.
