Small, individual servings of pizza baked in a muffin tin.
Ingredients

- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1/2 cup pizza sauce
- 1/2 cup shredded mozzarella cheese
- 1/4 cup mini pepperoni slices
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Grease a standard 12-cup muffin tin.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate small bowl, whisk together the milk, vegetable oil, and egg.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Spoon about 1 tablespoon of batter into the bottom of each prepared muffin cup.
- Top the batter in each cup with a small amount of pizza sauce.
- Sprinkle mozzarella cheese and pepperoni over the sauce in each cup.
- Bake for 15 to 18 minutes, or until the tops are lightly golden brown and cooked through.
- Remove from the oven and let cool in the tin for 5 minutes before transferring to a wire rack to cool slightly.
Notes
- You can add other small pizza toppings like cooked sausage or diced peppers.
- For a crispier bottom, use paper liners and remove the cupcakes immediately after cooling slightly.
