Instructions
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- In a small bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate small bowl, combine the milk and pineapple juice.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk mixture, beginning and ending with the dry ingredients. Mix until just combined.
- In a separate bowl, combine the crushed pineapple, brown sugar, and melted butter. Mix well.
- Spoon about 1 tablespoon of the pineapple mixture into the bottom of each muffin liner.
- Spoon the cake batter over the pineapple mixture, filling each liner about two-thirds full.
- Bake for 18-22 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
- Garnish with maraschino cherries before serving.
