- 1 can (20 oz) pineapple rings in juice, drained (reserve juice)
- 1/4 cup butter, melted
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 1/4 cup butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 1/4 cup reserved pineapple juice
- Red and green maraschino cherries for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- Arrange drained pineapple rings evenly in the bottom of the prepared pan.
- In a small bowl, combine the 1/4 cup melted butter and 1/2 cup brown sugar. Pour this mixture evenly over the pineapple rings.
- In a large bowl, cream together the 1/4 cup softened butter and 1 cup granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- In a small bowl, combine the milk and 3/4 cup reserved pineapple juice.
- Add the dry ingredients to the wet ingredients alternately with the milk mixture, beginning and ending with the dry ingredients. Mix until just combined.
- Pour the batter evenly over the pineapple and brown sugar mixture in the pan.
- Bake for 35-45 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes.
- Invert the cake onto a serving platter.
- Garnish with red and green maraschino cherries while warm.

- Ensure your pineapple rings are well-drained to prevent a soggy cake.
- You can use fresh pineapple rings if preferred, but adjust sweetness as needed.
- For an extra festive touch, sprinkle edible glitter over the top after garnishing with cherries.
