  • 1/4 cup butter, melted
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1/4 cup reserved pineapple juice
  • Red and green maraschino cherries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Arrange drained pineapple rings evenly in the bottom of the prepared pan.
  3. In a small bowl, combine the 1/4 cup melted butter and 1/2 cup brown sugar. Pour this mixture evenly over the pineapple rings.
  4. In a large bowl, cream together the 1/4 cup softened butter and 1 cup granulated sugar until light and fluffy.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. In a separate bowl, whisk together the flour, baking powder, and salt.
  7. In a small bowl, combine the milk and 3/4 cup reserved pineapple juice.
  8. Add the dry ingredients to the wet ingredients alternately with the milk mixture, beginning and ending with the dry ingredients. Mix until just combined.
  9. Pour the batter evenly over the pineapple and brown sugar mixture in the pan.
  10. Bake for 35-45 minutes, or until a wooden skewer inserted into the center comes out clean.
  11. Let the cake cool in the pan for 10 minutes.
  12. Invert the cake onto a serving platter.
  13. Garnish with red and green maraschino cherries while warm.
