A simple, refreshing smoothie featuring pineapple and fresh mint.
Ingredients

- 1 cup frozen pineapple chunks
- 1/2 cup water or coconut water
- 1/4 cup fresh mint leaves
- 1 tablespoon lime juice
- 1 teaspoon honey or maple syrup (optional)
Instructions
- Place the frozen pineapple, water or coconut water, mint leaves, lime juice, and sweetener (if using) into a blender.
- Blend on high speed until completely smooth. Add a splash more liquid if the mixture is too thick.
- Pour the smoothie into a glass.
- Serve immediately.
Notes
- Adjust the amount of mint to your taste preference.
- For a colder smoothie, use all frozen pineapple.
- You can substitute spinach for half the mint for added nutrients without changing the flavor much.
