A moist and flavorful pound cake with the tropical flavors of pineapple and coconut.
Ingredients

- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup coconut milk
- 1/2 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- 3 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, cream butter and sugar. Add eggs one at a time, then vanilla.
- Alternate adding flour mixture and coconut milk to the butter mixture.
- Fold in crushed pineapple and shredded coconut.
- Pour batter into the loaf pan. Bake for 55-60 minutes or until a toothpick comes out clean.
- Cool before slicing.
Notes
- Use fresh pineapple for better flavor.
- Toast shredded coconut for extra texture.
- Store in an airtight container for up to 3 days.
