Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup coconut milk
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 3 large eggs

  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar. Add eggs one at a time, then vanilla.
  4. Alternate adding flour mixture and coconut milk to the butter mixture.
  5. Fold in crushed pineapple and shredded coconut.
  6. Pour batter into the loaf pan. Bake for 55-60 minutes or until a toothpick comes out clean.
  7. Cool before slicing.
