Ingredients

- 1 cup pineapple juice
- 1/4 cup coconut milk
- 2 tablespoons chia seeds
- 1 tablespoon lime juice
- 1 teaspoon honey or agave nectar (optional)
- Ice cubes
- Fresh mint leaves for garnish
Instructions
- In a glass, combine pineapple juice, coconut milk, chia seeds, and lime juice.
- Stir well to combine.
- If using, add honey or agave nectar and stir until dissolved.
- Let the mixture sit for 10-15 minutes, stirring occasionally, until the chia seeds begin to gel.
- Fill glasses with ice cubes.
- Pour the mocktail mixture over the ice.
- Garnish with fresh mint leaves.
- Serve immediately.
Notes
- For a thicker consistency, you can let the mixture sit for longer or add more chia seeds.
- Adjust sweetness to your preference.
- You can substitute pineapple chunks for pineapple juice for a chunkier texture.
