Simple recipe for making tangy pickled red onions at home.
Ingredients

- 1 large red onion, thinly sliced
- 1 cup water
- 1 cup white vinegar
- 2 tablespoons granulated sugar
- 1 teaspoon salt
Instructions
- Slice the red onion thinly. Place the slices into a clean glass jar.
- In a small saucepan, combine the water, vinegar, sugar, and salt.
- Heat the mixture over medium heat, stirring until the sugar and salt dissolve completely. Do not boil.
- Carefully pour the hot brine over the sliced onions in the jar, ensuring the onions are fully submerged.
- Let the jar cool to room temperature on the counter.
- Seal the jar and refrigerate. The onions will be ready to eat in about 1 hour, but flavor improves after 24 hours.
Notes
- You can add a few peppercorns or a bay leaf to the brine for extra flavor.
- The pickled onions will keep in the refrigerator for up to two weeks.
