  • 1/2 cup packed light brown sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup chopped pecans
  • 1/2 cup light corn syrup
  • 1/4 cup packed light brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking pan.
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and 1/2 cup melted butter. Press firmly into the bottom of the prepared pan.
  3. Bake crust for 10 minutes. Remove from oven and let cool slightly.
  4. In a large bowl, beat cream cheese until smooth. Add 1/2 cup granulated sugar, 1/2 cup brown sugar, flour, and 1 teaspoon vanilla extract. Beat until combined. Beat in eggs one at a time.
  5. Pour cream cheese mixture over the cooled crust.
  6. In a small bowl, combine chopped pecans, corn syrup, 1/4 cup brown sugar, 2 tablespoons melted butter, and 1 teaspoon vanilla extract. Spoon evenly over the cream cheese layer.
  7. Bake for 40-45 minutes, or until the center is set.
  8. Let cool completely in the pan on a wire rack. Refrigerate for at least 2 hours before cutting into bars.
