- 4 cups cornflakes cereal
- 1/2 cup chopped peanuts (optional)
- Christmas colored sprinkles (optional)
Instructions
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the cornflakes cereal and chopped peanuts, if using.
- Drop rounded tablespoons of dough onto the prepared baking sheets.
- If desired, press a few Christmas colored sprinkles onto the tops of the cookies.
- Bake for 9-11 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
