- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup brown sugar
- 1/2 cup peanut butter
- 1 1/2 cups milk (dairy or non-dairy)
- 2 large eggs
- 2 ripe bananas, mashed
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Grease an 8×8 inch baking dish.
- In a large bowl, mix the rolled oats, baking powder, salt, and brown sugar.
- In a separate bowl, whisk together the peanut butter, milk, eggs, mashed bananas, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Pour the mixture into the prepared baking dish.
- Bake for 30 to 35 minutes, or until the top is set and lightly golden brown.
- Let it cool for a few minutes before cutting and serving.
Notes
- You can add chocolate chips for extra flavor.
- Use creamy or crunchy peanut butter based on your preference.
- For a sweeter dish, add a drizzle of maple syrup on top after baking.
