  • 2 cups strong brewed coffee, cooled

  • 24 ladyfingers
  • 2 cups sliced fresh peaches
  • 1/4 cup peach schnapps (optional)
  • Grated white chocolate or cocoa powder for garnish

Instructions

  1. In a large bowl, beat the mascarpone cheese, granulated sugar, and vanilla extract until smooth.
  2. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture.
  3. In a shallow dish, combine the cooled coffee and coffee liqueur (if using). If using peach schnapps, lightly toss the peach slices in it.
  4. Quickly dip each ladyfinger into the coffee mixture, ensuring they are moistened but not soggy.
  5. Arrange a single layer of dipped ladyfingers in the bottom of a 9×13 inch baking dish.
  6. Spread half of the mascarpone cream mixture over the ladyfingers.
  7. Arrange half of the sliced peaches over the cream layer.
  8. Repeat the layers: dip and arrange another layer of ladyfingers, spread the remaining mascarpone cream, and top with the remaining peaches.
  9. Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
  10. Before serving, garnish with grated white chocolate or a dusting of cocoa powder.
