A delightful Peach Tiramisu recipe, made without raw eggs, perfect for Easter and Christmas celebrations. This dessert features layers of creamy mascarpone, sweet peaches, and coffee-soaked ladyfingers.

- 1 pound mascarpone cheese, softened
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy cream
- 2 cups strong brewed coffee, cooled
- 1/4 cup coffee liqueur (optional)
- 24 ladyfingers
- 2 cups sliced fresh peaches
- 1/4 cup peach schnapps (optional)
- Grated white chocolate or cocoa powder for garnish
Instructions
- In a large bowl, beat the mascarpone cheese, granulated sugar, and vanilla extract until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture.
- In a shallow dish, combine the cooled coffee and coffee liqueur (if using). If using peach schnapps, lightly toss the peach slices in it.
- Quickly dip each ladyfinger into the coffee mixture, ensuring they are moistened but not soggy.
- Arrange a single layer of dipped ladyfingers in the bottom of a 9×13 inch baking dish.
- Spread half of the mascarpone cream mixture over the ladyfingers.
- Arrange half of the sliced peaches over the cream layer.
- Repeat the layers: dip and arrange another layer of ladyfingers, spread the remaining mascarpone cream, and top with the remaining peaches.
- Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
- Before serving, garnish with grated white chocolate or a dusting of cocoa powder.
Notes
- Ensure your mascarpone cheese is at room temperature for easier mixing.
- Do not over-soak the ladyfingers, as they can become mushy.
- Chill the tiramisu for at least 4 hours for best results.
- Add a layer of thinly sliced peaches between the ladyfinger layers for extra peach flavor.
