A quick and easy pasta salad recipe perfect for a light meal or side dish.
Ingredients

- 8 ounces pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, black olives, and feta cheese.
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the pasta mixture and toss to coat.
- Serve immediately or chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
Notes
- You can substitute any small pasta shape for the penne.
- Feel free to add other vegetables like bell peppers, carrots, or broccoli.
- Add grilled chicken or shrimp for a complete meal.
